We would like to own a Bed and Breakfast in the hill country outside of Austin, overlooking the beautiful Lake Austin.  It would be a 2 story house built of native limestone so to blend more with the environment and have huge oak trees all around full of little white lights.  It would have a large wrap-around porch with ceiling fans,  rocking chairs and over-stuffed chairs.  The front for leisurely relaxation and conversation and the back to enjoy the sunsets over the lake or to watch water skiers first thing in the morning when the water is like glass.  We would call our place Luogo di Pace Bed and Breakfast, which is Italian for Peaceful Place.  It will also have a garden to meander through and a pond with Black Swans.  The first restaurant I ate at in France in the late 70’s was along the German border by the black forest.  The restaurant had windows all across the back which overlooked a  pond full of black swans.  It was so beautiful and I swore if I ever had my own place, I would have a pond with swans.

The inside would be decorated with a European flare but still be bright.  Lots of comfy chairs and chaise lounges with several fire places and fresh cut flowers in every room.  There would be a main dining room, a small dining room, a veranda with an outdoor fireplace, and an upstairs patio which any could be reserved for a more quiet and romantic atmosphere for those that preferred.  Room service would also be offered.

I would grow most of  my own vegetables and herbs. Fresh eggs and organic meat would be purchased from the local farms which offer almost any types of meats like beef, pork, buffalo, venison, caribou, guineas, quail, dove, and ostrich to name a few.  Local seasonal fruits would be used as much as possible, served fresh, as relishes to brighten the foods or desserts.  All the breads and pastries would be baked fresh daily to include croissants for breakfast.   I would like to have a large kitchen and storage area off from the house with an enclosed walkway to the house, like the old summer kitchens they used to have.  This will keep the house quiet from early morning cooking and late night clean-ups.

The atmosphere would be very relaxing but I would like the menus to be unique and unexpecting with full course dinners being offered and full bar service. Guests could pick the menus that they would prefer when they make their reservations, that way we would ensure we have any unusual items in stock and also special requests for those with a specific diets.

It would be more of an upscale fare and for adults, couples or singles, verses families.  There could be special circumstances if a group or a family reserved all the rooms at the same time, children could be allowed.
