Ingredients

  • Use 2 slices bread either Ciabatta or an Italian Bread
  • 1 tablespoon pesto (recipe below)
  • 1 tablespoon chopped black and green olives
  • 2 slices of tomato
  • 5 slices Fontina or Gouda cheese
  • Olive oil spray

Optional

Peppers and other vegetables you desire.

Directions

  1. Turn on you sandwich machine or grill
  2. Slice the bread into ½ inch pieces. Spread pesto all over one slice bread.
  3. Chop up the olives and putting them over the pesto. Tomatoes are next and then cheese over the tomatoes finish by putting the rest of the bread on top.
  4. Lightly spray one side of the sandwich with olive oil spray, flip it over and repeat. Put the sandwich on the grill or sandwich machine cook until crispy brown and the cheese is gooey and melted.

Ingredients for Pesto

  • 2 cups basil leaves
  • garlic – 2 cloves
  • walnuts or pine nuts 1/4 cup
  • extra-virgin olive oil 2/3 cup
  • salt and black pepper
  • 1/2 cup freshly grated Parmesan cheese or Pecorino I prefer the Pecorino

Directions

Combine the basil, garlic, and nuts until coarsely chopped, using a food processor. Add 1/2 of the oil and process until fully mixed, season with salt and pepper.
